This is a recipe we've been making for years in my family. It was passed on to my mom by a family friend and I remember first making it as a teenager.
Not only is this recipe easy AND affordable, but your kids will actually eat it! Plus, its the perfect soup for those chilly fall days when you are craving something warm in your belly.
Prep time: About 10 mins
Cook time: About 20 mins
Ingredients:
- 2 cans cream of chicken soup
- 6 cups water
- Chicken bouillion cubes or paste
- 1 package egg noodles
- Carrots
- Canned or rotisserie chicken
- Salt/pepper (optional)
To Prepare:
First chop up your carrots. Put as many or as little carrots as you want-it's up to you. Next, fill a large pot with 6 cups water. Add in 6 bouillon cubes or equal amount of paste. I prefer to use paste as it contains less preservatives. If you're interested in trying it out you can order it here. Then add your 2 cans of soup and stir to mix. Bring to a boil.
Next, add your carrots and noodles. If you add the entire bag of noodles, it will not have a ton of broth left. So if you like your soup with more liquid, only add about 10-12 ounces of noodles. Then, dump in 1-2 cans of chicken or shredded rotisserie chicken. Add as little or as much as you want!
Put the lid on and reduce hit to low-med. Let simmer about 15 minutes. Remove from heat. Add one heaping scoop of sour cream and stir. Your yummy soup is ready to eat!
